Inspiring Woman - Amber Harper

           I remember the first time meeting Amber...she had just joined the AAU team that I was playing on. Dynamite 87 was our team name...and we walked around looking like little boys, but you didn't want to see us on the court!! LOL!! I remember Amber came to the team with DEFENSE!!!! We both ended up leaving the team, and then randomly ended up at McMurry University together our freshman year. I only stayed at McMurry for a year...but that didn't stop any of the fun that was had! I vividly remember going out one night with Amber and some others, and they all entrusted me to drive us to and from the club without my glasses on. I can PROMISE you that we had the Lord and ALL of our guardian angels in the car with us that night!!!!!! Over the years I have watched Amber be a complete BOSS in everything that she has done...and lately have been sooooo inspired by her courage and determination to start her own business, and completely KILL it!!!!! I am so than...

My newest OBSESSION!!!!!

 


    Hi!! So...I'm back. I apologize for my delay in posting lately...it's been a hell of a few weeks. I'll talk about that on a later post...maybe. Hope everyone is well though. I have missed posting. Of course, we are talking about my favorite thing, food, more specifically SUGAR, because it makes me HAPPY!! Even more specifically...DESSERTS!!! Yes...I know...sugar and sweets are bad for you...but so are alot of other things...so let me LIVE!!!! Today I bring to you my new favorite obsession...DUMP CAKES. Listen...I'm sure I am super old to the game with dump cakes...but hey/..better late than never!! I've got 4 recipes to share with you, and surprisingly, my favorite of the 4 is NOT either of the chocolate ones. I know...I'm just as shocked as you are. I am determined to find a chocolate one to take that #1 spot...so definitely be on the lookout for a part 2 of this!! 

    Most of the recipes I saw on random YouTube videos, and I will put links to them below. The 2 fruit recipes I didn't follow very much, I really just used the videos for the ingredient lists. The 2 chocolate ones I followed pretty much to a T. Everything will be listed below. 

    So let's start with a chocolate one. This one I made back in December because we had a ton of marshmallows and graham crackers that we weren't going to eat, and I had promised my boyfriends brother that I would make him a dessert, and he loves marshmallows...so it worked out perfectly! I got this recipe from the Blog Mostly Homemade Mom. It is technically called a S'mores Cobbler, but honestly, they are the same thing. This one was really good...my only issue with this one is that I think it had too many marshmallows...which I think was completely my fault. Also, definitely add more butter...a stick and a half is best. It was very rich, but eating it with the whipped cream definitely made it taste better and cut into that richness.

5 oz pkg cook and serve chocolate pudding mix
3 cups whole milk
12 graham cracker squares
3/4 cup miniature semi sweet chocolate chips
15 oz box chocolate cake mix dry
1/2 cup cold butter sliced
10 oz miniature marshmallows
whipped cream

Prepare chocolate pudding with milk on stove top as directed on package. Allow to cool in pot for 15 minutes.
Spread pudding evenly into the bottom of a 9 x 13 baking dish. Lay graham crackers evenly in pudding and sprinkle with 1/2 cup chocolate chips.
Sprinkle dry cake mix over pudding and dot with slices of butter. Bake at 350 degrees for 25 minutes.
Remove from oven and stir making sure any dry cake mix spots have be moistened.
Sprinkle evenly with marshmallows and remaining chocolate chips. Bake an additional 5 – 8 minutes or until marshmallows are puffy and brown. Allow cobbler to cool 15 minutes before serving topped with whipped cream.

  


    Next...is a fruit one I made on 4/20...I also made this one for my bfs brother and his family, because I never made him the apple pie I promised to make. This Caramel Apple Dump Cake hits all the spots!! I really liked this one, but since I had already made my favorite dump cake, this one had to take a not so close 2nd. I ate mine with vanilla ice cream, the same way that I would an apple pie, and I definitely liked it with ice cream much better than I liked it by itself. I found this on a YouTube video (https://www.youtube.com/watch?v=JqtKIVJLraY ), but I didn't really follow any of her instructions...I really just used the video for the basic list of ingredients. Next time I make it though, I will add more caramel and cinnamon, and maybe try a cinnamon ice cream with it as well. 

2 cans apple pie filling 
1 jar caramel sauce...put as much or as little as you'd like (I used about 3/4 jar, but next time I will use the entire jar)
1 box yellow cake mix (I used Butter Golden by Duncan Hines)
1 1/2 Sticks of butter (I used salted, but you can use unsalted)
I also added cinnamon and vanilla...no measurements were used, I just added and tasted as I went until I got the taste that I was looking for. 

Pour the apple pie filling in the bottom of the pan.
Pour the caramel sauce on top. Add as much or as little as you would like.
Evenly pour the cake mix on top and spread out to make as even a layer as possible.
DON"T MIX IT!
Put the sliced butter on top. I put them as close together as possible.
Bake at 350 degrees until a toothpick comes out clean. Mine baked for about 1 hr and 15 minutes. Check it after about 40 min and go from there. 


    I made this Better Than Oreos Dump Cake last night. I just knew that this was going to be my absolute favorite thing, and I was going to eat the entire pan in one sitting. Womp Womp...it isn't that it wasn't good...because it was...but I think that it was just a little more dry than I was expecting, and I definitely need to eat it with either some whipped cream or ice cream. It was good and rich, but just lacked something that I can't quite put my finger on. It also needs a ton more butter on top, or the better should be melted first and then added to the top, because there were definitely dry spots that I didn't get from any of the other cakes. I also found this recipe on YouTube (https://www.youtube.com/watch?v=CscHHmZfH00), and I actually followed it pretty much to a T, but if I make it again, I will make a few adjustments. 

1 layer of oreo cookies
14 ounces of condensed milk 
8 oz of cool whip 
1 pack of chocolate fudge cake
1 ½ sticks of butter sliced thin (I would use 2 sticks)

Put 1 layer of oreo cookies at the bottom of the pan.
Pour condensed milk on top.
Put an even layer of cool whip on top.
Pour entire pack of cake mix on top and spread out as evenly as possible.
DO NOT MIX IT!
Place butter on top as close together as possible, or melt butter and pour on top.
Bake at 350 for 45 mins or until a toothpick comes out clean. (Mine took a little under an hr)




    And now to my FAVORITE Dump Cake!!! This Peach Cobbler Dump Cake is everything that I wanted it to be. I have made this 2 times, and neither one lasted more than 24 hrs. My mom wanted me to make a peach cobbler, but I didn't feel like putting in the effort, so I went on the hunt for a peach cobbler inspired dish that wouldn't take any time to put together. There are many recipes for a peach dump cake, but they don't have any of the additives that make it taste like a peach cobbler, so I was super happy when I ran across this YouTube video (https://www.youtube.com/watch?v=I3uvIlrvT34) that was exactly what I was looking for. The first time I made it was the test run, and it was all gone almost as soon as I made it. The second time was for the party my mom asked me to make it for...and the only problem with it, was that I only made 1 pan. It literally went so fast that I barely got any at all. I LOVE peach cobbler, and there really isn't anything like the original version...but I promise you that if someone asks me to bring a peach cobbler to ANY function...I will almost always bring this dump cake in its place. I like it a tad bit better with vanilla ice cream, but if I didn't have any, I would be just fine. I've already given this recipe to multiple people that were at the party, and I will also be making it again soon since the last one didn't taste like I wanted it to...and I need some comfort!! LOL!! I didn't follow this recipe either...I just used it for the basic ingredients, and added everything together according to my taste. It is soooooo good...I promise you won't be disappointed!! I somehow managed to not get any pics of the cake after I spooned it into my bowl either time that I made it. 😒

29 oz can sliced peaches in heavy syrup
1 1/2 sticks of butter sliced thin
1/2 stick of butter melted
brown sugar (to taste)
cinnamon (to taste)
nutmeg (to taste)
vanilla (to taste)
1 box yellow cake mix (I used Butter Golden by Duncan Hines)

Pour the entire can of peaches in pan with syrup (I also cut the peaches up some to make them a little smaller)
Mix together the melted butter and brown sugar and pour it over the peaches
Add cinnamon, nutmeg, and vanilla to taste and mix together (I did not use any measurements, I just added and tasted as I went until I got the taste that I was looking for)
Pour an even layer of cake mix on tip and spread out as evenly as possible.
DO NOT MIX IT!
Placed sliced butter on top as close together as possible (you can also melt this butter and add it on top)
Bake at 350 for 45 min or until a toothpick comes out clean (I baked mine for about an hour and 15 min)
